i have a silpat and having really used it...I love my Pampered Chief Bar Pan and Pizza Stone for all my cookies, i never use a regular cookie sheet anymore.

I tried parchment paper a couple years ago for a batch of cookies that were notorious for sticking to the pan. I really like it and do use it on occasion. Haven't tried Silpat though. I really like the airbake pans & have good luck with them.

I have had a baking stone for about 8 years and I don't bake cookies on anything else now. It is wonderful! It provides very even baking and even browning. My stone has turned rather dark (seasoned), but that prevents cookies from sticking.

I don't have a Silpat brand baking sheet. But I do love my Tupperware Silicone Wonder Mats. I have 2 of them, one for each jelly roll pan (16x11). (Yes, I am a consultant.) I love the silicone baking sheet and I use it for anything that goes on a sheet pan, not just cookies. Cookies release beautifully and do not burn. But you can also use it to bake fish or chicken or bake hors d'ouevres. Cleanup is easy. Storage? I roll mine in a dish towel and put it length wise in a kitchen drawer. A friend who bakes a lot hangs hers on the side of the fridge with a magnet. As for parchment paper... Parchment paper is silicone coated and works the same way as the mats--only it's not something you can keep and reuse. Parchment you have to rebuy all the time. If you bake a lot, it's not that cheap either. And while I have used it before and liked it, I decided it's not the environmentally friendly way to go. The mats seem expensive, but as long as you don't cut on them, they are sturdy and last forever. Invest in one. You'll be surprised how great they are. I like plain old cookie sheets, I've never had a problem with them, though some times to prevent burning I will double them up, a tip I learned from my momma.
