Me: Here's the rules... No chocolate chip cookies
Her: I don't bake cookies with time left from job, someone else can bake (but only can do chocolate chip cookies). If that's fine, I'll want to come.
Me: I wonder if anyone else has had this issue and what did they do?
Help please?

Every year I have someone bring sugar cookies, I just appreciate that they brought something even though I wish they had put a little more effort into it. Maybe you could suggest she add peanut-butter chips instead of chocolate to change it up a little. Sometimes they just need to attend one cookie swap to get excited about it and get into the spirit of baking.

There are many, many recipes that are SIMPLER to make w/ less ingredients than Toll House chocolate chip cookies. The reason non bakers default to choco-chip is because the recipe is listed on the package.
I would send her 3 simple recipes and tell her to choose one.
These recipes are all "out there" in some form, but they are also in my book: "The Cookie Party Cookbook"
Mexican Wedding Cookies (pg 174) Espresso Shortbread cookies, (pg 103) Petite Almond Pies (pg 210) (can sub pecans)
If you care enough about her attendence, there's always certain people you have to "hand-hold"... I still have a few (and thankfully it's just a few) people who require more attention than others.
