What a great site. I'm participating in an exchange at work later this month and have seen a lot of great recipes. One that really caught my eye was in a photo sent by Katarina P's 2nd Cookie Exchange 2001 Mesa, AZ, the Poinsettia Cookie on a three tier tray. Does anyone have this (or a similar) recipe. I found a couple on a search but they all called for sprinkling red sugar on the cookie. I like the way this one is prepared with colored dough. Thanks!

Oh Julie: I have a Poinsettia Cookie recipe that I made last year. Its really easy and the cookie looks fantastic. I believe this particular recipe is made with cream cheese. I'll dig it out and post it. Lisa

Not sure if this is the kind of cookie you are looking for, but they taste great and look so pretty!! This one does have the red sugar but it makes them look so attractive. I could be left out. POINSETTIA BLOSSOMS 3/4 cup butter or margarine, softened 1/2 cup sugar 1 tsp vanilla 30 drops red food coloring 1 egg 1 package (3 ounces) cream cheese, softened 2 cups all-purpose flour Red sugar, if desired 3 dozen yellow candy coated chocolate candies or any other small yellow candies Beat butter, sugar, vanilla, food coloring, egg and cream cheese in large bowl with electric mixer on medium speed or mix with spoon. Stir in flour. Cover and refrigerate for about 2 hrs or until firm. Heat oven to 375. Shape dough into 1 1/4" balls; roll in red sugar. Cover and refrigerate for 1 hr. Place balls about 2" apart on ungreased cookie sheet. Make 6 cuts with sharp knife in top of each ball about three-fourths of the way through to make 6 wedges. Spread wedges apart very slightly to form flower petals. (cookies will separate and flatten as they bake) Bake 10 to 12 minutes or until set and edges begin to brown. Immediately press one candy in the center of each cookie. Carefully remove from cookie sheet to wire rack. These take a little time just because of the refrigeration, but they taste delicious and look so pretty and dainty. Lisa
