Last year on the food network cookie exchange show one hostess made cookies that had crushed potato chips in them. Has anyone heard of this recipe or have this recipe they would like to share.

Here is a great Potato Chip Cookie Recipe (from Mr. Food's A Taste of QVC Cookbook)
Potato Chip Cookies
2 cups (4 sticks) butter, softened 1 cup granulated sugar 3 1/4 cups all-purpose flour 1 tsp. vanilla extract 1 1/2 cups coarsely crushed potato chips 1/4 cup confectioners' sugar
Preheat oven to 300 degrees. In a large bowl, with an electric mixer on medium speed, cream the butter and granulated sugar. Slowly blend in the flour and vanilla. Add the crushed potato chips; mix well. Drop by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Using a fork, flatten each cookie. Bake for 18 to 20 minutes, or until light brown around the edges. Remove to cooling rack and sprinkle with the confectioners' sugar. If not serving immediately, store in an airtight container until ready to serve.
I've brought these cookies to the hospital where I work many times.....they are always a big hit! I use Ruffles potato chips and had to extend the baking time to 28 minutes in my oven at home.

I just brought in a batch of these to work today! (Everyone seems amazed that one of the ingredients is potato chips). We are having a cookie exchange on my floor at the hospital on December 21.
I got an idea from Gooseberry Patch's "Cookie Swap" book. I wrapped the cookies individually in treat bags and tied on a tag with the date and location of the cookie exchange. The book has tags you can cut out, copy, and color. Hopefully the "ad" will encourage more people to participate!
