I was at the Rocky Mtn Chocolate Co. store the other day (in Michigan) where I sampled a marshmallow that had been dipped in a wonderful caramel. It was softer caramel than the one I use for my pretzel and apples, but held to the marshmallows wonderfully. It almost seemed "buttery."
Some they dipped in chocolate after they dipped in the caramel, but they were delicious just in the caramel set inside a little paper cupcake liner.
Anyone know what type of caramel this might be? If so, do you have a recipe?

Wilton.com has a really nice dipping caramel recipe. It contains sweetened condensed milk, karo syrup and a couple of other things. I was very reluctant to try it because I cannot stomach the taste of evaporated milk. There was none! ;D I tried it for my candy turtles and it was wonderful. I did not cook it to the temp that the recipe called for, I watched it for the consistency I wanted by dropping a small amount in cool water.
