Hi, Have purchased Lime Chips ( like chocolate only pale green and lime flavored). Very happy to have found them. Those wonderful Lime Coolers made in Georgia were so delicious, I have been trying to make a lime cookie ever since I first tasted them. But, very difficult. Couldn't get a good lime flavor. Do NOT want to put brown sugar in them, because of the taste conflict; so the usual chocolate chip cookie recipe won't work. Don't know how to adjust the recipe to leave out the brown sugar. Wondering if a regular cut out sugar cookie would. Will try that next.. Meanwhile, anyone have a recipe or ideas? Thanks, Lynn

I have never even heard of lime chips.
I did run across a recipe for Lime Coolers in one of the many Christmas magazines I have started to buy.
I guess you may have to experiment. Try the sugar cookie with the lime chips and let us know. In the meantime I will look for the recipe I found and post it for you.

If you want your lime cookies to be soft using the sugar cookie recipe, you might want to make the cookies a little thicker than the usual rolled thin dough, and bake them a little less time than the recipe calls for. I take my sugar cookies out before they are really done and let them cook a little longer on the pan. That way they are a little softer than a sugar cookie rolled thin and cooked til brown around the edges like most recipes say. I'd love to know how they turn out. Where did you find your lime chips? I've never heard of them either! Let us know how they turn out. Jean

How about some variation of this recipe? I have had lemon and lime cookies made with this type of a base, and they melt in your mouth! I too would love to know where you found the lime chips. Let us know what you come up with!
Nutty Butter Balls 1/2 cup Butter or margarine -- softend 1/2 cup Confectioner's sugar 2 cups Flour 1 teaspoon Vanilla 1/2 teaspoon Vanilla flavoring (here's where you might get creative) 1/4 teaspoon Salt (optional) 1 cup Walnuts or pecans -- chop fine (maybe use the chips here???) 3/4 cup Confectioner's sugar for -- rolling
Preheat oven 400° F. Place butter in bowl and add 1/2 c. confectioner's sugar and mix on medium speed of mixer until creamy and fluffy. Add flour a little at a time. Beat on low speed after each addition of flour. Keep beating until flour is well mixed. Add flavorings and sprinkle salt over the mixture. Add nuts and mix well with a spoon. Shape 1 tablespoon of dough into ball. Put balls on cookie sheet about 1 inch apart. Bake for 10-15 mins. Cookies will be done, but not brown. Remove from cookie sheet to wire rack and cool completely (about 20 mins). Roll in remaining sugar and carefully
