I had someone do an Italian coconut thumbprint cookie with strawberry jam in the middle that was very good.
I'll look for the recipe for you.

Here's a recipe from Challenge Butter. It's addictive: COCONUT CRANBERRY CHEWS - Makes 6 dozen 3 sticks Challenge Butter, at room temperature 2 cups sugar 1 Tbsp. orange zest 2 tsp. vanilla extract 1 large egg 3 1/4 cups all-purpose flour 1 tsp. baking powder 1/4 tsp. salt 1 1/2 cups dried sweetened cranberries 1 1/2 cups sweetened coconut 1. In large bowl, beat 1 1/2 cups butter, sugar, orange zest and vanilla till smooth. Beat in egg until well blended. 2. In medium bowl, mix flour, baking powder and salt. Add to butter mixture, stir to mix, then beat on low speed until dough comes together, about 5 minutes. If too crumbly, keep mixing. Mix in cranberries and coconut. 3. Shape dough into 1" balls. (Can be frozen on cookie sheet at this point, then tossed into a zipper bag and stored up to 1 month in freezer. Thaw on cookie sheet 30 minutes, then bake as below). Place on buttered or parchment-lined 12" x 15" baking sheets. 4. Bake in a 350-degree oven until cookie edges just begin to turn brown, 11 to 15 minutes (shorter baking time yields a chewier cookie, longer baking time yields a crispier cookie). If using two cookie sheets, switch their postitions in oven halfway through baking. Cool on sheets for 5 minutes, then use spatula to transfer to racks to cool completely. Not good hot out of the oven, eat after completely cooled.

Here's my favorite coconut cookie. ;D Robin
Swedish Coconut Cookies
3 1/2 cups flour 2 cups butter, softened 2 cups sugar 1 tablespoon baking powder 1 tsp baking soda 1 tsp vanilla 1 cup sweetened flaked coconut
Combine all ingredients except coconut in a large bowl. Beat at low speed, scraping bowl often, until well mixed, at last five minutes. Add coconut, beat until just mixed.
Divide dough in logs, 10-12 inches long. Wrap rolls in wax paper or plastic wrap; refrigerate until firm, at least 2 hours. You will get about 5-6 rolls.
Cut rolls into 1/4-inch slices. Place 2 inches apart onto ungreased cookie sheets. (I use parchment paper.) Bake for 10 minutes or until edges are lightly browned. Let stand 1 minute, remove from cookie sheets.
Bake at 350°F. Approximately 8 dozen cookies

Here is my recipe for coconut cookies. They are delicious and have become a holiday staple! For the holidays I divide up the coconut in the recipe and color it with food coloring. 1/2 of the coconut becomes green and 1/2 red. The cookies look festive this way.
Coconut Icebox Cookies
1 C. white sugar 1 C. brown sugar 1 C. shortening (I use ½ butter, ½ Crisco) ½ tsp. salt 2 eggs, well beaten 2 C. oatmeal 2 C. flour 1 tsp. baking soda ½ tsp. cinnamon 1 tsp. vanilla 1 C. coconut
Mix ingredients in order given. Shape into rolls, wrap in plastic wrap, and place in refrigerator over night (or for at least 5-6 hours). Slice and bake at 350º on an ungreased cookie sheet for 7-10 minutes.
