Southern Living October issue has an article on Make Ahead Cookies and I am definitely taking advantage this year. I may even use the roll/slice cookies for gifts -just let them bake their own whenever. I like the idea of shaping the cookie dough into logs and wrapping in parchment paper. The article also showed putting the logs in the cardboard roll from paper towels to keep them from flattening on one side. Cookie dough can be stored in the fridge up to three days and frozen up to six months. I also like the idea of shaping dough into rolls, placing them on a baking sheet to freeze and then transferring to a zip lock freezer bag until time to bake. The article said to allow 2-3 minutes more baking time for frozen dough. I think I would just take out a bag and thaw in the fridge overnight then bake which is also recommended. It's that time of year when I need to start thinking about my Christmas cookies.

Sounds like a good way to keep some on hand for those "drop in" guests. I too have started doing the cookie planning. I have already signed up to take cookies for my son's 2nd grade class Christmas party.For my cookie exchange, I've got my list of guests,kinds of cookies I want to make and also some of the party favors. I can't wait--i've already been trying out some new recipes-hubby sure likes it-LOL.

I'm going to start doing this with certain cookie recipes and not just for Christmas tins. I think it will be nice to put in a sheet of cookies to bake while having dinner (especially in the winter months). Nothing says loving like fresh baked cookies for dessert.
