How do you divide up the cookies?

This is my first cookie exchange, and stupid as it may sound, I'm not sure how the cookies get divided up. I'm assuming you display them, provide containers and let everyone pick out 6 dozen assorted cookies that they want to take home; but I want to be sure this is the correct way..........Lynn
