Hi Sally, I'm new to the Cookie Exchange board...
I freeze my cookies before they are baked. Right now I have chocolate chip, chocolate cranberry/brandy chip, triple ginger, and chocolate crinkles in the freezer.
I use a cookie scoop and put the dough on a plate that is lined with parchment. I freeze the cookie dough in balls. Then, move them to my containers for storage/freezing. When I want to bake them, I take them out of the freezer and put them on a cookie sheet, lined with parchment, and turn the oven to 350F. When the oven reaches the proper temp, I just pop the mixed cookies in the oven. We always have fresh, warm cookies.
